Who doesn't love a good sandwich spread? Growing up we had a ton of tuna and egg salad. I remember having ham salad too, but it was alway from the deli. I figured I would try and make my own version using our leftover ham. I hope you enjoy it.
3 cups ham, diced
1 cup celery, diced
1/4 cup red onion, chopped fine
2 hard boiled eggs, chopped
2 dill pickle spears, chopped
1 cup mayonnaise
1.5 teaspoons Dijon mustard (or regular mustard if you prefer)
Salt and Pepper to taste
Combine all ingredients in a medium sized bowl. Spread on your favorite sandwich bread or on crackers. Enjoy!
