Ranger Cookies

I’m not sure where this cookie gets it’s name, but I do know where I first had it. My friend Karen brought this cookie to my Sweets Swap years ago. I remember the chewiness caused by the coconut, but without the heavy coconut flavor. The recipe came from her husband’s aunt Billie. I stored it away and finally brought it out the other day. I hope you enjoy them as we do.

Ingredients

1 cup shortening (I use butter)

1 cup granulated sugar

1 cup brown sugar

2 eggs

2 tsp. vanilla

2 cups all-purpose flour

1 tsp. baking soda

1 tsp. baking powder

1/2 tsp. salt

1 cup shredded coconut

2 cups Rice Krispies

2 c. quick oats

Method

Preheat your oven to 350 degrees. Cream the shortening and sugars in the bowl of a mixer. Add eggs and vanilla and mix until smooth. Sift the flour, soda, baking powder and salt and add it to the sugar mixture until just combined. Add the oats, Rice Krispies and coconut until combined. Mold the dough into balls approximately 1.5” wide. Place them on a cookie sheet that is greased or prepared with a sheet of parchment paper. Bake for 14 minutes or until lightly browned. Remove to a wire rack and cool. Enjoy!
