Banana Bread


1 cup vegetable oil

2 cups sugar

4 eggs

1/2 cup buttermilk

4 cups all purpose flour

1 tsp. salt

2 tsp. cinnamon

2 tsp. baking soda

2 tsp. vanilla

4 large mashed bananas


Preheat oven to 350 degrees.  Grease and flour 2 loaf pans.  

Cream together the oil and sugar.  Add the eggs and mix well.  Add the mashed bananas and vanilla, continue to mix well.  In a separate bowl, whisk together the flour, salt, cinnamon and baking soda.  Starting and ending with the flour mixture, alternately add it to the banana mixture with the buttermilk, stirring until combined.  Do not overmix.  Pour the batter into the two prepared loaf pans.  Bake for 50-55 minutes or until a toothpick comes out clean.  Let cool slightly before removing from the pan.  This recipe yields 2 loaves and will freeze well.  Enjoy!
