Sheet Pan Chicken Fajitas

The sheet pan all in one meal craze is real!  I had some sliced chicken in the freezer and peppers in the fridge, so why not create something quick and tasty.  To me, there is not much better than roasted peppers and onions, add some seasoning and chicken and you have an easy meal that is sure to please.  

Ingredients

2 lbs. chicken breast sliced for fajitas

2 bell peppers of your choice, sliced (I like big pieces - approx. 1 inch wide)

1 Vidalia onion, halved, then sliced to make wedges (not hamburger slices)

Seasoning:

1 1/2 tsp. garlic powder

1 1/2 tsp. ground cumin

2 tsp. chili powder

1 tsp. sweet paprika

1/4 tsp. cayenne pepper

1 tsp. Mexican oregano

1 tsp. ground black pepper

1 tsp. kosher salt

Method:

Preheat the oven to 400 degrees.  In a small bowl mix together all of the seasoning ingredients.  Prepare a baking sheet by spreading a light coating of olive oil.  Place the chicken pieces on the pan and sprinkle 3/4 of the season on the chicken.  Tossing to coat evenly.  Push the chicken to one side of the pan and place the peppers and onions on the other side.  Drizzle some olive oil over the peppers and onions and sprinkle the remaining seasoning on the veggies.  Toss to coat.  Place in the preheated oven for 20-25 minutes, stirring halfway through.  Enjoy with your favorite tortillas and toppings.
