Potato Chip Crusted Chicken Nuggets

Why not make chicken nuggets at home?  Step it up by using your favorite chips as the breading.  Here I used Kettle Brand Barbeque Chips, but you can experiment with others.  It's pretty easy to do and so flavorful.

Ingredients

2 pounds boneless, skinless chicken breast, cut into nugget sized pieces

1 large bag of Kettle Brand Backyard Barbeque potato chips

2 eggs

Your choice of dipping sauces, I used barbeque sauce

Method

Preheat the oven to 400 degrees.  Line a large sheet pan with foil and spray a non-stick spray or brush a thin layer of oil to keep from sticking.  Pulse the chips in the bowl of a food processor until you have coarse crumbs (not too fine) and put them in a bowl.  If you don't have a food processor you can place them in a zip lock bag and crush them with a rolling pin or the bottom of a frying pan.  Scramble the eggs in a bowl and set aside.  Set up your breading station with the bowls in order chicken, eggs, chip crumbs and prepared pan.  Dip the chicken in the egg and flip to coat and then in the chips and transfer to the pan and repeat.  It helps to keep one hand wet and one hand dry.  Bake for 20-25 minutes until done (depending on the size).  Enjoy!
